Ingredients

  • 4 big Potatoes (peeled and sliced thin)

  • 1/2 Cup Butter

  • 1/2 Cup Flour

  • 3 Cups Sour Cream

  • 1 Cup Water

  • 2 – 3 Cups Colby Jack Cheese

  • Garlic

  • Dried Minced Onion

  • Chives

  • Parsley

  • Salt

  • Pepper

  • Olive Oil Spray

Directions

  • Preheat oven to 375. Prepare a 9 x 13 casserole dish by spraying with olive oil spray.
  • Peel potatoes and slice thinly. Rinse in a strainer. Leave to drain for now.
  • Whisk together sour cream and water until well blended.
  • Melt butter in a saucepan. Mix in flour. Whisk until a thick, smooth, and bubbly roux.
  • Whisk the sour cream and water mixture into the roux until hot and creamy.
  • Add garlic, dried minced onionchivesparsleysalt, and pepper to taste.
  • Add colby jack cheese and whisk until melted.
  • Add all to a 9 x 13 casserole dish. Cover with aluminum foil. Bake for 1 hour or until potatoes are tender.
